Abstract

The aim of a project carried out in 1997 was to determine the current distribution of quality influencing substances in the sugar beet. For this purpose beets were separated in the following morphological sections: The upper crown with living leaf insertions, lower crown with leaf scars, hypocotyls and the root with the rootgroove. The sugar content slightly decreased from the root up to the lower crown, up to the upper crown the decrease exceeded 25 %. In comparison with it the content of soluble nitrogen, amino-nitrogen, raffinose and of reducing sugars increased considerably from the root up to the apical section of the bet. The sugar molasses in the upper crown was lower when estimated according to the formula of Buchholz et al. (1995) than according to the formula of Reinefeld et al. (1974). The upper crown has an inferior quality compared to the other sections of the beet, especially with consideration of the nonconventional quality influencing substances.
